Ingredients

  • 2 filletssalmon(6 oz each, skin-on)
  • 2 mediumsweet potatoes(cubed into 1-inch pieces)
  • 2 cupsgreen beans(trimmed)
  • 2 tbspolive oil
  • 2 clovesgarlic(minced)
  • 1 tsppaprika
  • 1 tspdried thyme
  • 1 lemonlemon(sliced)
  • 1/2 tspsalt and pepper

Instructions

    Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.

    Toss sweet potato cubes with 1 tbsp olive oil, salt, and pepper. Spread on one half of the baking sheet.

    Roast sweet potatoes for 10 minutes while preparing other ingredients.

    Toss green beans with remaining olive oil and a pinch of salt. Add to baking sheet alongside sweet potatoes.

    Pat salmon fillets dry. Season with garlic, paprika, thyme, salt, and pepper.

    Push vegetables to the sides and place salmon skin-side down in the center.

    Lay lemon slices over the salmon fillets.

    Roast everything for 12–15 minutes until salmon flakes easily and sweet potatoes are tender.
